Smashed Potatoes with Southern Style Chicken Nuggets


    

Now this may not be the healthiest of meals I'll warn you about that but if your not on a diet it's damn good! My boyfriend worked at chick-fil-a in high school so he enlightened me with the secret nugget recipie and I have to say they taste pretty similar! haha 

Ingredients:
Chicken tenderloins 
3 tbls Milk
3 Eggs
1 1/2 cups Flour
Vegetable oil 
Lawrys seasoning
Salt/pepper

5-6 red potatoes
1/3 cup milk
3tbls butter
3tbls sour cream
chopped scallion 
Bacon bits
Cheddar cheese
Salt/pepper

The chicken recipie:
1. Heat oil in frying pan to medium high (it's ready to go when you hear it cracking)
2. In bowl wish egg and milk for egg wash 
3. In another bowl heavily season your flour with lawrys, salt and pepper. You should be able to see the seasoning throughout your flour 
4. Cut chicken tenderloins into bite size peices, then dip in egg wash followed by flour 
5. Fry peices till golden brown (about 5mins in oil)

Potato casserole:
1. Cut potatoes into quarters leaving skin on and place in big pot
2. Fill pot with water and bring to a boil, cook till potatoes are soft all the way through (about 10mins)
3. Strain potatoes and pour into a casserole pan 
4. Add milk, sour cream, butter, and seasonings and smash using a spatula (the kind with holes in it)
5. Add handful of scallions, bacon and cheese.... I'll let you choose how much.. And mix with spoon
6. Pop in the oven at 300 for about 5 mins and serve!
