Shrimp Scampi with Sun Dried Tomatoes


Now I'm not usually much of a shrimp person but hey add enough butter and garlic to a dish and I'll pretty much be a fan, so this is why shrimp scampi is about the only shrimp dish you'll find on this blog. Hope you like it!

The ingredients:
1. One bag of frozen large shrimp (deveined) or fresh if you don't mind a little work 
2. Heaping of chopped sun-dried tomatoes
3. Handful of chopped Basil
4. 4 cloves of minced garlic
5. 4tbls butter
6. 1tbls olive oil
7. 1/3 cup of light cream
8. Pasta ( your choice)
9. Parmesan to sprinkle 

The recipie:
1. Started off by melting one of the tablespoons of butter and your olive oil in a sauce pan at medium-low heat
2. Now add your deveined shrimp and garlic to the pan, saute till shrimp is just about done (when they begin to curl)
3.  Add to the pan your sun-dried tomatoes, basil, and the rest of your butter and olive oil and simmer for a few minutes
4. Add cream and bring it to medium till the sauce bubbles
5. Add in pasta and sprinkle with parmasean before serving
