Roasted Red Pepper Pasta


This was originally a Pinterest recipie, however, I thought it needed a little something so by doctoring it up with some spinach and sudried tomatoes this recipie is a keeper! 

What you need:
Box of pasta
2 chicken breasts
Jar of roasted red peppers 
Jar of sundried tomatoes or roasted grape tomotes (whichever your preference)
1/2 a chopped onion
4 cloves of garlic
1/2 pint of heavy cream
4 tbls Olive oil
2tbs butter
1/3 cup of Parmesan 

1. Cook chicken breasts on med low with  2 tbls olive oil and a tbls of butter with the chopped onion and one minced garlic clove
2. While chicken cooks make the sauce by blending jar of roasted red peppers with remaining garlic and olive oil and parmasean in blender 
3. When chicken is done cooking chop it up into peices and pour the mixture from the blender into pan
4. Add remaining butter and cream to pan and simmer on low while pasta cooks 
5. Add pasta and spinach to the sauce and sprinkle with cheese then serve!
