Rigatoni A La Vodka.... minus the vodka

 
 
Rigatoni A La Vodka 
 
So I know traditionally vodka sauce is made with vodka, but hey those on a beer budget like myself don't want to be wasting our vodka on pasta sauce so I decided to make a vodka free vodka sauce, that in my opinion is just as good and has even more flavor.
 
 
The Recipe:
  • Rigatoni
  • Jar of marinara sauce
  • Jar of alfredo sauce
  • 1/2 White onion
  • 4 slices of thick cut pancetta from deli or the prepackaged cubed pancetta found near your deli
  • Red pepper flakes
  • Parmesan
  • Essentials
  1. Start off by sautéing copped onion and cubed pancetta in 2tbls olive oil and 2tbls butter on medium low
  2. After about 5 minutes add 3 minced garlic cloves and 1/2tbls of red pepper flakes
  3. When pancetta is browned and onions translucent add two jars of sauce and season with salt pepper and any Italian seasonings of your preference
  4. Simmer on low while you cook the pasta then combine and add some parmesan to taste
