Parmesan truffle fries with garlic aolì



So I know what your thinking, truffle oil is so not part of our beer budget! But truth is you can find some pretty cheap truffle oil at most grocery stores and because the flavor is so strong you will keep the se bottle for awhile. 

The recipe
Fries:
• four russet potatoes
• vegetable oil for frying
• grated Parmesan
• truffle oil

Aolí:
• 1/4 cup Hellmann's mayonnaise
• 3 tablespoons olive oil
• 1 teaspoon Dijon mustard
• 1 teaspoon capers
• 1 clove minced garlic
• Salt pepper and Italian seasoning
 
Fries:
1. First heat your oil on medium high in the Fryingpan
2. Cut potatoes lengthwise into strips
3. Begin fry until golden brown
4. Drizzle with truffle oil and top with grated Parmesan cheese

Aolí:
1. Mix mayonnaise with olive oil and stir till combined
2. add capers, garlic, Dijon mustard and seasonings
3. Let chill and serve with fries!
