Christmas Dinner to Please The Relatives

So everyone looks forward to the holidays primarily for the food, but I'm not sure why? To me the Holidays seem to be an over abundance of mediocre food but this year in a quest to change that I made a homemade meal to please all of the relatives.... or at least the majority.





On the menu: Gluten free Chicken breasts.... (for those looking to keep the same belt size over the holidays)
                     Meatballs and hot Italian Sausage in a Semi- homemade tomato sauce
                     Grape tomato, spinach and artichoke pasta, in a garlic white wine cream sauce

The Recipes!
Gluten Free Chicken:
  • Package of Chicken Breasts
  • Gluten Free Bread Crumbs (I used Alexa's)
  •  Essentials* (butter, olive oil, salt, pepper)
  • Egg
  • Milk

  1. Start off with 1 tbls olive oil and 1tbls butter in saucepan over medium low heat
  2. Meanwhile pound out your chicken breasts to about a 1/4 to 1/2 inch thick
  3. Make an egg wash in separate bowl by whisking 2 eggs and a tbls of milk
  4. Dip chicken in egg followed by breadcrumbs and into the pan they go!
  5. Cook till browned on each side and cooked through
*Note now that I live in the South Ive become a believer in the "low and slow' process so i now cook my chicken on medium low for about 10-15 mins and then i check a piece to make sure its fully cooked

Pasta in a white wine cream sauce with grape tomato, spinach, and artichokes:

  • Pasta of choice
  • White wine
  • Grape tomato's
  • Artichokes
  • Garlic
  • Spinach
  • Light Cream
  • Essentials
  • Balsamic Cream (if you want to be fancy )
  1. In the same pan you cooked your chicken breasts add a splash or two of white wine on medium heat to deglaze the pan and get all those good flavors off the bottom of the pan ( I usually use the wine I'm drinking for the night which 90% of the time is a 10$ bottle of Sauvignon Blanc....)
  2. Next add some butter and olive to your pan and turn it to low, a tbls of each should do the trick!
  3. Now we cut are tomatoes in half and deseed them by pressing your finger into them... this can get messy so don't be alarmed by the seedy mess
  4. Saute the tomatoes and add 2 or 3 cloves of chopped garlic to the pot
  5. When that's smelling tasty add some chopped artichokes, I use the small jar of pastene marinated artichoke hearts 
  6. Now we add some spinach to the mix, if you don't like spinach basil will work as well just add less. I use half a bag of fresh baby spinach
  7. Lastly add 1/2 a cup of light cream and let the sauce simmer on low for 5 more minutes!
  8. add pasta or serve over rice and your chicken breats to top and drizzel with balsamic glaze
This recipe is one of my favorites and looks a lot fancier then it really is, always a good thing ;)
