Brushetta for the Holidays

 
Who doesn't like bruschetta?? I think bruschetta is a crowd pleaser on any occasion, especially with my family. Now this isn't your average bruschetta, its a warm tomato and boursin cheese bruschetta on grilled ciabatta with balsamic cream! Now I know I'm breaking the bruschetta rules, traditionally its served cold with uncooked tomato and mozzarella, but hey why not break the rules...

The recipe:

  •  Ciabatta bread
  •  Boursin cheese 
  •  Basil
  • Grape tomato
  • Balsamic cream
  • The essentials

  1.  Start off by cutting your grape tomatoes in half and deseeding them but pushing down on the middle
  2. sauté your grape tomatoes over medium heats with 2 tbls of olive oil and 2 cloves of fresh chopped garlic and a handful of chopped basil for about 5 mins
  3. Meanwhile grill your ciabbata slices (I brush with olive first, and if the grill is to much for you to take on for an app the toaster works just fine!)
  4. When the bread is good and toasted spread your fancy cheese on top and then add tomato mixture to the top
  5. Finally we have to add the finishing touch, a drizzle of balsamic cream!
Tips: if your like me you may have some sticker shock with the boursin cheese.... its about $6 a package but its worth every penny if you want to impress your guests but if want to save a few dollars the garlic herb pub cheese works good or goat cheese would work!
